Abalone marinated in grapeseed oil infused with shallots, garlic and Groix pepper. A 100% island recipe since the abalones and chilli are from the island of Groix and the dressing of this verrine is made by the artist Agathe Marin de Groix.

Ingredients: Groix abalone (Haliotis tuberculata) 49%, grape seed oil, shallot, Groix pepper 1.8%, garlic.
